Day 16: Bassano del Grappa

Assaggiare - to taste. To try a taste. Not to try on clothing (provare) but to see if the flavor is a fit for you. 

For instance, wine. I've learned the difference between Valpolicella and Amarone. Both are fits for me, but a special Valpolicella Ripasso may just be the best of both worlds. Valpolicella "re-passed" over Amarone pomace, as if to say there's still something here. I want it. I'll coax it out. Don't mind me, I'll wait.

That's the beauty of second chances.
